You can set a goal meat temperature, upon reaching which the heating will stop, to prevent overcooking

Steak
Drying: preheat to 100°F for 1 hour
Main Smoking: smoke at 248°F until internal temperature reaches 140°F
Holding: keep at 122°F to stay warm until ready to serve

Preheating: set to 100°F for 1 hour
Main Smoking: increase to 248°F until internal temperature reaches 195°F
Holding and Smoking: Maintain at 140°F for up to 5 hours
Chicken
Drying: preheat to 100°F for 1 hour
Main Smoking: smoke at 248°F until internal temperature reaches 165°F
Holding: keep at 122°F to stay warm until served
